In our every day life, articles of food are essential materials, consequently, the food safety is a very important idea. On this field, there are hazard phenomena, too. Authors give a definition of food safety, they present different materials and factors influencing the food safety and they also are speaking about two books: Codex Alimentarius and Codex Alimentarius Hungaricus.
